PKU Cookbook Part 1 PKU Kookboek Deel 2

After years of recipes in binders, we decided it was high time: in 2015 our first cookbook 'PKU PROOF: 101 delicious low-protein recipes' was launched. Since then, over 1,000 copies have been sold as the go-to book for low-protein cooking. This book was published in both Dutch and English.

Ten years later - in 2025 - we published our second cookbook 'PKU PROEF Doorproeven'. Full of new modern low-protein recipes and worldly flavors of our time. This book is unfortunately only available in Dutch and can still be ordered.

But PKU PROOF is more than just two amazing cookbooks. You can also be inspired by new dishes and products by following us on Facebook (the largest PKU community of the Benelux), Pinterest or Instagram. Cook along in workshops we organise or in the online PKU PROEF Cooking Studio, with videos you can find on our YouTube channel.

So keep following us, so we can keep surprising you!

What is PKU?

PKU stands for phenylketonuria, and is a rare, incurable, inherited metabolic disorder that occurs in about 1 in 18,000 newborns. If you have PKU, your liver is not able to process one specific component of proteins. That culprit, the amino acid phenylalanine (Phe), therefore accumulates in your blood and hinders the growth and development of the brain. Untreated, PKU leads to brain damage. In most countries, newborns are checked for PKU with the heel prick. If PKU is detected in a baby, treatment is started immediately.

That treatment should prevent the accumulation of the amino acid phenylalanine in the body. But that amino acid is a natural part of almost all food. This is why PKU patients follow a strict low protein diet throughout their lives. No meat, no fish, no cereals, no milk, no soy and no nuts, but a lot of fruit and vegetables.

About the cookbooks

The first PKU cookbook contains 101 low-protein recipes. In the cookbook you will find soups, side dishes, salads, pizzas, pasta and rice dishes, stews and curries, potato dishes, vegetable dishes, snacks, desserts and pastries. Half of the recipes have a tasty photo showing the end result.

Our second cookbook contains 80 recipes with once again - at the request of our supporters - a photo of the dish with every recipe. In the book you will find starters, main courses, meat and fish substitutes, side dishes, desserts, breakfast & lunch dishes, savoury and sweet snacks and biscuits & pastries.

All recipes provide a step-by-step description of how to prepare the dish. Sometimes useful tips are given, so that you can easily vary. Of course, each dish contains a list of the ingredients you need, with the associated protein and Phenyl values. This makes it easy to incorporate dishes into your diet. These overviews are also useful if you want to leave out ingredients because you don't like them. Or if you want to add things and vary. Most of the ingredients are readily available in the supermarket, sometimes combined with special low-protein products (such as pasta and flour) that you can usually easily order online.

For determining the protein values, we used various reputable sources, the most important being voedingswaardetabel.nl and nevo-online.rivm.nl. Both books have been reviewed by dietitians specialised in PKU.
